Using bigger tires and wheels but the struts are in the way. (Off road car) Any ideas?

I am planning on converting a 91 Dodge Colt in to a sort of semi sand car to off road in the desert around my area. The original wheels were 13s which I replaced with 15s. The next step was going to be getting larger off road tires for the new 15 x 8 rims. Like a fool I never really thought about the struts being in the way (Fenders are not a problem since I am removing them). Right now with lower profile street tires on the rims I have about an inch of clearance between the strut and tire and fitting larger tires on is not going to be possible. Do you have any advice? Would it be possible to swap out the struts for longer struts off of a different model car? A conversion to a different suspension type? (The struts on there probably wont hold up to too much of a beating anyways.)

how does a car move forward when the wheels are spinning?

if you have a front wheel drive, or a rear wheel drive, and you jack your car up. You take one of the wheels and spin it, the other one will spin in the same direction, perspectively. like if you spin one wheel to the right, the other one will also spin to the right. However, if you spin one forward, the other one will spin backward. If that happes, how do the engine, and the transmission make the car go forward?

Do most new cars that have front wheel drive use one or two wheels to move the car?

I have a 2010 Mazda3 and was wondering if both wheels are propelling the car. I have heard that some front wheel drive cars only have 1 wheel moving it.
